4 cups Pitted Cherriesfinely chopped

7 oz Certos (liquid pectin)

6 1/4 cups Sugar

prepare jars and lids by simmering in boiling water for 10 minutes |

Pit and finely chop 3 lbs of cherries |

Place 4 cups of chopped cherries into stockpot |

Add 6 1/4 cups of sugar into 2nd bowl |

Pour sugar into stockpot containing cherries mixing well |

Bring mixture to full rolling boil for 1 minute stirring constantly then remove from heat |

stir in 7oz of pectin into pot and bring back to full rolling boil for 1 minute .. remove from heat and skim foam. |

Ladle immediately into jars filling each within 1/4 inch of top. Wipe jar, rim and threads. Screw two piece lid down tightly |

Placed filled jars into large pot ensuring that top of each jar is covered by 1-2 inches of water. Bring to gentle boil and continue to boil for 10 minutes. Remove and allow to cool fully. |
